Northern European Herring Salad

1 600 gram/26 oz. jar of Feature Foods Herring in Wine Marinade, drained, onions remover, and diced

1 16 oz. jar pickled beets, diced, liquid reserved

2 apples, peeled, cored and diced

1 large potato, boiled and diced

Capers to taste (optional)

Chopped pickles to taste

Salt and pepper to taste

2 eggs, hardboiled and diced
Combine all ingredients except eggs. Add enough beet juice to reach desired consistency. Note: potatoes will absorb some of the juice. Cover and let stand in refrigerator for 1 day to allow the flavors to blend. Adjust salt and pepper if necessary. Sprinkle with diced egg when ready to serve.
