Herring Salad with Beets and Pickles
- 1 725 gram/32 oz. jar of Feature Foods Herring in Wine Marinade, drained and onions removed
- 2 medium potatoes
- 2 medium green apples
- 4 red beets, boiled
- 3 green onions
- 5 dill pickles
- 1 ½ pt. low fat sour cream
- ½ to 1 tsp. dried thyme
- Salt and pepper to taste
Cube herring. Combine with apples, potatoes, beets, pickles, and green onions. Mix in sour cream and spices. Cover and let stand in refrigerator for 1 day before serving
