Scandinavian Potato Salad with Herring
Salad:
- 2 (15 ½ oz.) cans whole Irish potatoes, drained
- 1 c. unpeeled and finely chopped apples
- ½ c. finely chopped dill pickles
- ½ c. low fat sour cream
- ¼ c. low fat mayonnaise
- ¼ c. chopped fresh parsley
- 2 tbsp. Dijon mustard
- ¾ tsp. salt
Toppings:
- 1 320 gram/13 oz. jar Feature Foods Herring in Wine Marinade, drained and onions removed
- ½ apple, unpeeled and cut into thin wedges
- 1/8 c. sliced almonds
- Sprigs of dill or parsley
- Lettuce leaves to line a 10 in. plate
Dice potatoes into ½ inch cubes and mix with apples and pickles in a medium bowl. In a separate bowl blend sour cream, mayonnaise, parsley, mustard and salt. Pour over potatoes and stir gently to coat evenly. Cover and chill 4 to 6 hours or overnight. Mound potato salad on top of lettuce lined plate. Garnish with toppings.
